Well we got up super duper early so we could go and get our daughters passport done. It wasn't as bad as i thought and the wait time was just over half hour before our number was called.... Amaya did so well and didn't fuss one bit but she managed to take a HUGE poop while there so i got to take her ot the abthroom and change the stinky thing... lol
We are going to Florida to visit my inlaws late April so we had to get it done... i am looking forward to the trip but a little scared about it all.. heh
It's snowing here today.. the weather SUCKS and i cannot wait until it warms up so I can take my daughter out and see the world! Just going to the mall is super fun for her so i am looking forward to taking her to the zoo this summer.. She LOVES animals and i think the zoo is really going to WOW her. <3 She's my everything.
Tonight is left over pasta from last night.... it turned out really good too.....
Tomorrow I am making Chicken Parm with more leftover pasta.... (ugh pasta 3 days in a row but i won't let it go to waste) I made a lot of sauce so hopefully there is enough for the chicken parm.....
Here is how we make it...
Ingredients:
- 4 boneless chicken breasts, pounded to 1/2 inch thickness
- 1 egg
- 1/2 cup milk
- seasoned bread crumbs
- 2 to 3 tablespoons olive oil
- Sliced mozzarella cheese, or more
- 1 jar of pasta sauce (straight tomato sauce.. no added spices)
- Parmesan cheese-grated
Preparation:
In a pot, bring your sauce to a boil. Add the spices you prefer when making your sauce. (i put salt, pepper, chili flakes, garlic salt and a pinch of chili powder) Once boiling, turn it down and let it simmer for 20-25 minutes.
Whisk together the egg and milk. Dip the chicken breast into the milk and egg mixture and then into bread crumbs.
Heat your olive oil in a large skillet over medium-high heat.
Brown the chicken breast in the hot oil on both sides until golden, about 3-4 minutes on each side.
Set the chicken in a baking dish.
Slice your mozzarella into 1/2 inch slices and put two on top of each chicken breast.
Pour your cooked sauce over all pieces of chicken breasts.
Sprinkle the top with grated Parmesan cheese and a little more mozzarella (grated if prefered) and bake at 350° for about 30 minutes, or until bubbly. Serve and enjoy!!!
Makes a nice side for pasta.
